In this recipe, we'll guide you through the steps to create a lemony masterpiece that will leave you craving for more. Let's dive into the details!

  • 2¼ cups (285 g) all-purpose flour
  • 3 tbsp (22 g) cornflour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 6 tbsp (86 g) butter
  • ¾ cup (141 g) unflavored vegetable oil
  • 1⅔ cups (333 g) white granulated sugar
  • Zest of 2 lemons
  • 2 large eggs, at room temperature
  • ¾ cup (185 g) regular yogurt, at room temperature
  • ¼ cup (55 g) fresh lemon juice
  • For the glaze:
  • 3 tablespoons lemon juice
  • 1 cup of powdered sugar

  1. Preheat your oven to  to 160 °C (320°F). Grease your cake pan or line it with parchment paper for easy removal.
  2. In a bowl, combine the all-purpose flour, cornflour, baking powder, and baking soda. Mix them together, ensuring they are well incorporated. Set aside for later use.
  3. In a large mixing bowl, cream together the butter, vegetable oil, and white granulated sugar. Beat the mixture until it becomes light and fluffy. This process should take around 3-4 minutes.
  4. Add the lemon zest to the butter, oil, and sugar mixture. Mix it in thoroughly to infuse the batter with the vibrant lemon flavor.
  5. Add the eggs, one at a time, to the mixture. Beat well after each addition, ensuring the eggs are fully incorporated. Then, add the regular yogurt and fresh lemon juice to the bowl. Mix until all the ingredients are well combined.
  6. Gradually add the pre-prepared dry ingredient mixture to the wet ingredients. Mix gently until the batter is smooth and there are no lumps. Be careful not to overmix.
  7. Pour the batter into the prepared cake pan, spreading it evenly. Place the pan in the preheated oven and bake for 30-35 minutes or until a toothpick comes out clean. If it comes out clean, your cake is ready.
  8. Once baked, remove the cake from the oven and let it cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely. Once cooled, you can frost or decorate the cake as desired. Recipe for glaze is above.
