Ingredients
- 1 ½ cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¾ cup sugar
- 2 eggs - at room temperature
- ½ cup oil
- 2 teaspoons of vanilla essence
- ½ cup greek or plain yogurt
- ¾ cup brown sugar
- 1 teaspoon of cinnamon
- ⅓ cup desiccated coconut
- 3 tablespoons of butter
- 2 apples diced
Instructions
Preheat your oven at 170°C or 338°F on bake.
Add flour, baking powder, baking soda, and sugar into a bowl and whisk to combine.
Create a well in the centre of the dry ingredients and then add in eggs, oil, vanilla and plain yogurt.
Fold mixture together being cautious not to over mix.
Add brown sugar, cinnamon, coconut, and semi melted butter together and mix well to form a crumble.
Add cake batter to the lined cake tin, and place the cake mixture inside. Spread diced apple over top followed by crumble mixture.
Bake in the oven for 30 minutes or until the cake becomes slightly golden on top and a skewer and be inserted and removed clean.
