How to Make Quick and Easy Macaroni Salad from Scratch
This recipe is super easy to make and sometimes you just don’t mess around with the classics! Some may say that macaroni salad recipe is too simple, but the great thing about it is you can add literally whatever you want to it. Some like eggs, bacon, walnuts – I have seen so many variations to this recipe.
All you need to do is cook macaroni as per instructions on the packet and allow it to cool down. Add in your sauce outlined in the recipe below and then add everything you want in terms of vegetables and proteins!

How long can you keep this Macaroni Salad for?
Macaroni salad will keep for up to five days when stored in the fridge in an airtight container. I often make this salad in advance and serving at picnics and potlucks, but try not to leave it out at room temperature (or worse, in the heat!) for very long as the dressing base will not keep very well in the heat.

How to make the BEST Macaroni Salad!
Ingredients
- 250gms macaroni
- 2 stalks celery
- 1 carrot
- ½ onion
- chives
- 125gm sour cream
- ½ cup mayonnaise
- 1 tablespoon dijon mustard
- 1 teaspoon garlic powder
- ¼ teaspoon pepper
- ½ teaspoon salt
- ½ mixed bell peppers
Instructions
- Prepare macaroni noodles according to package instructions. Drain and rinse immediately with cold water and set aside to cool completely.
- Chop your veggies and grate carrots and set aside while your macaroni pasta cools down.
- Add sour cream, mayonnaise, dijon mustard, garlic powder, salt and pepper and mix well.
- Add dressing to cooled macaroni and mix well
- Now add your veggies and mix again - it best to let this chill prior to serving for at least one hour!
