This recipe yields 12 generously-sized cookies, but you can make smaller cookies by following the instructions in the NOTES section below. To start, line a small baking sheet or plate with parchment paper. In a small bowl, whisk or use a mixer (depending on the consistency of your cream cheese) to combine the cream cheese with powdered sugar until smooth.

Ingredients

  • 150gms Cream Cheese
  • ¼ cup Powdered Sugar
  • 5-6 Strawberries
  • 115 grams butter (cold)
  • 190 grams (1 cup) brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, cold
  • 245 grams (1 and 3/4 cup) plain flour
  • 1/2 teaspoon baking soda
  • 2 tablespoon cornstarch

Instructions

  1. Spoon 12 heaping teaspoons of cream cheese onto the prepared baking sheet or plate, and freeze for at least one hour until almost completely solid. Meanwhile, line two large baking sheets with parchment paper and set them aside. In a separate bowl, whisk together flour, salt, and baking soda, then set it aside.
  2. Using a handheld mixer or standing mixer, beat the butter and sugars together until light and fluffy for about 1-2 minutes. Mix in the egg and vanilla extract. Add in the flour, salt, and baking soda, and mix until just combined, being careful not to over-mix.
  3. Dice the strawberries and gently fold them into the dough, being cautious not to over-mix to prevent squishing the strawberries and bleeding of their colour into the dough.
  4. Using a heaping tablespoon, scoop 12 portions of dough onto each baking sheet. The portions should be fairly large, equivalent to about 2 tablespoons each, as these are intended to be big cookies. Press the back of a teaspoon slightly into the top of half of the dough balls to create an indent.
  5. Retrieve the cream cheese filling from the freezer and place one frozen portion into the centre of each cookie. Take a second ball of dough and place it over the cream cheese, pinching the sides to seal the cream cheese inside without squishing it into the dough. The dough may become sticky and crumbly due to the strawberries, but don't worry, just work with it and wipe your hands clean before moving on to the next cookie. The resulting dough balls should be tall in shape.
  6. Refrigerate the prepared cookie dough balls and repeat the process with the second baking sheet and remaining dough. Preheat your oven to 350°F and leave the cookie dough in the fridge while it preheats.
  7. Bake the cookies one sheet at a time in the preheated oven for 13-17 minutes, or until the edges are slightly golden brown and the tops are set. Remove from the oven and allow them to cool on the baking sheet for 10-15 minutes before transferring them to a cooling rack to cool completely.
