Ingredients

  • 190g butter
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 tbsp cocoa
  • 4 Weetbix, crushed
  • 1 cup plain flour
  • 1/2 cup coconut
  • 1 tsp baking powder
  • 1 cup icing sugar
  • 2 tbsp cocoa
  • 20g butter (melted)
  • 2 teaspoons boiling water

Instructions

  1. Preheat your oven to 180°C on fanbake.
  2. In a large saucepan over low heat, melt together the butter, brown sugar, white sugar, and cocoa.
  3. Once melted, take the saucepan off the heat and add the crushed Weetbix, plain flour, coconut, and baking powder. Mix everything together.
  4. Pour the mixture into a lined tray and press it down firmly.
  5. Bake for 15-20 minutes, or until the slice is cooked but still feels soft in the centre.
  6. While the slice is baking, make the icing. In a bowl, mix together the icing sugar, cocoa, and melted butter. Add boiling water as needed to loosen the mixture and whisk out any lumps.
  7. Once the slice is baked, remove it from the oven and let it cool for a few minutes. While it's still warm, spread the icing over the top.
  8. Allow the slice to cool completely and for the icing to set
