This delicious, melt-in-your-mouth coffee cake has a ribbon of cinnamon filling and a crisp streusel topping. The perfect cake to pair with coffee or tea. Soft with a moist crumb and a bit of crunch on top; it’s a perfect breakfast treat. Also this cake has no coffee it in. Coffee cake gets its name as it refers to a cake that’s meant to be eaten with your cup of coffee. ☕☕

This delicious, melt-in-your-mouth coffee cake has a ribbon of cinnamon filling and a crisp streusel topping. The perfect cake to pair with coffee or tea. Soft with a moist crumb and a bit of crunch on top; it's a perfect breakfast treat.

Ingredients

  • Crumble Topping
  • 50gms (1/4 cup) brown sugar
  • 68gms (½ cup) flour
  • 1 teaspoon cinnamon
  • 50gm butter melted
  • Cake Batter
  • 210gm (1 and 1/2 cups) all purpose flour
  • 2 teaspoons baking powder
  • 150gm (3/4 cup) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120ml (1/2 cup) vegetable oil
  • 120ml (1/2 cup) Greek yogurt

Instructions

1. Preheat oven to 170C on bake. Line and grease an 8-inch round cake pan with baking or parchment paper.
2. To make cinnamon crumble, in a medium-sized mixing bowl, add brown sugar, flour, cinnamon and butter. Mix together until wet and crumbly and set aside.
3. In a large mixing bowl, add dry ingredient into the bowl and mix well.
4. Form a well in the centre of the dry ingredients and add oil, eggs yoghurt and vanilla.
5. Mix well and then gradually combine the dry ingredients until its just mixed.
6. Add half of cake mixture to your cake pan and half of the crumble mixture. Repeat
7. Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle of the cake comes out clean.
