Roasted Potato Salad
This truly is the BEST Potato Salad Recipe and an absolute favourite in our house. It may be pretty bold to claim, but saying this potato salad recipe is the best is a statement I’ll totally stand behind.
Ingredients
- Potatoes - 6 medium size
- Olive Oil - 2 tbsp
- Salt - 1 tsp
- Pepper - ¼ tsp
- Mayonnaise - 4 tbsp
- Spring Onion - 2 finely chopped
- Red Onion - 1 small, diced
Instructions
- Wash the potatoes and cut them into cubes. You can keep or peel the skin of the potatoes at your convenience.
- Take a big bowl and put all the pieces into it.
- Add olive oil, salt, and pepper and mix all the ingredients well.
- Line an 8X8 baking tray with parchment paper.
- Place all the potato cubes over it and make sure every cube is set on the surface.
- Preheat the oven to 210 degrees. Put the tray into the oven and bake for 20 minutes.
- Put the baked potatoes back into the bowl.
- Add the mayonnaise, spring onion, and red onion and mix well. Make sure every piece is coated with mayonnaise. Serve and enjoy!
