Skip the oven and go straight to your microwave! With just 1 minute of cooking time, you can have a delicious slice of cheesecake. This recipe is so easy that even beginner bakers will be able to do it with no problem.

Ingredients

  • 10x plain biscuits
  • 2 tablespoons - melted butter
  • 5oz or 142gms - cream cheese
  • 1 egg
  • 1 tsp - vanilla essence
  • Topping of your choice

Instructions

1. Line ramekin with parchment paper and set aside.
2. Crush the biscuits into fine crumbs, then add to the ramekin with the butter and mix well. With a spoon, press the crust evenly against the bottom of the dish.
3. In a small bowl, combine the cream cheese, sugar, and vanilla, and egg, stirring until there are no lumps.
4. Spread the filling on top of the graham cracker crust. Microwave for 30 seconds and then a further 30 seconds. The centre should still be wobbly.
5. Chill in the freezer for at least 30 minutes (best is cooled for 2-3 hours) until completely cool to the touch.
6. With a knife, loosen the edges of the cheesecake, then invert onto a plate, or eat straight from the dish.
7. Top with a few raspberries or your other favourite toppings.
