I love this cake because it’s not overly sweet and the fresh flavour of the blueberries. I also love that his cake is made without butter and with pantry staples! So good, but so simple.
This cake is one of the easiest cakes to make. There is little that can go wrong if you follow the recipe. This recipe contains no butter, does not require a beater – such a super simple cake that is great start for beginners.

Easy Blueberry Tea Cake
Blueberry Tea Cake makes a wonderful mid-afternoon snack with a cup of your favourite tea or coffee.
Ingredients
- 1 ½ cup All purpose flour
- 2 teaspoons Baking Powder
- ¾ cup Sugar
- 2 Eggs
- 1 tablespoon Vanilla
- ½ cup Oil
- ½ cup Yogurt
- 1 cup Blueberry - Fresh or Frozen
- Sugar - ½ cup
- Flour - ¼ cup
- Melted Butter - 3 Tbsp
- Icing Sugar - ⅓ cup
- Water - 2 teaspoon
Instructions
- Preheat oven to 180 C (350 F) standard & Grease and line an 8 inch cake tin with baking paper.
- In a large mixing bowl, add all purpose flour, baking powder, and sugar. Stir briefly to combine.
- To the same bowl add room temperature eggs, vanilla, oil and yogurt. Mix well, but be cautious not to over mix.
- Add blueberries – again be careful not to over mix. Ideally as soon as you see the dry ingredients just incorporated you want your batter to be mixed and placed into the cake tin.
- To make crumble add flour, sugar and melted butter into a bowl. Mix together until clumpy and crumbly. Sprinkle over cake batter evenly.
- Bake cake for approximately 30 minutes in the oven or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
- To make the glaze, mix together powdered sugar and 2 tablespoons of water. Stir until smooth. Drizzle glaze all over the cake & serve!
