Ingredients

  • 230gm Cold Butter cut into small cubes
  • 1.5 cups sugar
  • 2 Eggs
  • 1/2 cup Dark Baking Cocoa
  • 1/2 cup cornflour
  • 2 cup All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 400gms of your favourite chocolate

Instructions

  1. Preheat the oven to 410°F (or 210°C).
  2. Using a large bowl, beat together the cold butter and sugar until light and fluffy. This should take about 4 minutes. Add one egg at a time, making sure to mix well after each addition.
  3. In the same bowl, add the cocoa powder, all-purpose flour, cornstarch, baking soda, and salt. Stir the mixture until well combined.
  4. Fold in the chocolate until it is evenly distributed throughout the dough.
  5. Divide the dough into large balls and place them on a lightly colored cookie sheet. If you have a kitchen scale, you can make the balls between 4.5 to 6 ounces. You should be able to fit 4-6 cookies on a large cookie sheet. This dough recipe should make 9 extra-large cookies.
  6. Bake the cookies in the preheated oven for 9-11 minutes or until they are golden brown on top. Once done, allow them to rest for at least 10-15 minutes to set.
