Christmas Edition: Gingerbread & White Chocolate Chip Cookies

Mix it up this year with these Christmas edition White Chocolate Chip cookies! These cookies have the flavour of Christmas written all over them with cinnamon and ginger flavours 🎄
Ingredients
- 115 grams (1/2 cup) cold butter
- 190 grams (1 cup) brown sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 245 grams (1 and 3/4 cup) all purpose flour
- ½ teaspoon cinnamon powder
- 1 teaspoon ginger powder
- 1/2 teaspoon baking soda
- Pinch of salt, optional
- 200 grams white chocolate
Instructions
- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line two baking trays with baking or parchment paper.
- In a large mixing bowl, add cold butter and sugar. Beat with an electric mixer until combined. Add vanilla and egg. Beat again until combined being careful not to over mix.
- Add flour, baking soda, salt, cinnamon and ginger powder. Beat on a low speed until soft cookie dough forms. Add chocolate and beat briefly until just combined.
- Scoop out cookie dough and then bake cookies for 12-14 minutes or until golden brown.
