No Bake Chocolate Mousse Cake

No-Bake Chocolate Mousse Cake

Yield: 8
Prep Time: 30 minutes
Additional Time: 2 hours
Total Time: 2 hours 30 minutes

This is a no bake chocolate mousse cake using only four ingredients: oreo cookies, butter, chocolate, and whipped cream. What I really love about this recipe is that you only need a handful of ingredients, it’s quick and easy to make, and you can make it ahead of time.

Ingredients

  • 2 packets oreo cookies
  • 60gm butter (melted)
  • 220gm milk chocolate
  • 600ml thickened or heavy cream
  • Dried raspberries for decorating

Instructions

Using a food processor or a snaplock bag, place oreo and grind until fine.
Melt butter and add to grinded oreo cookies. Mix well.
Add oreo mixture into a lined cake tin and press the oreo mixture down evenly. Add to the chiller while you make the remainder of the recipe.
Add chocolate to a microwave-safe bowl and melt 30 seconds at a time, stirring in
between. Set aside to cool.
Add fresh whipping cream into a mixing bowl, and beat until stiff peaks.
Add the cooled chocolate to whipping cream, and fold into mixture.
Add mixture to chilled oreo base and chill for at least 3 hours or overnight for best results.
